Cheat Night Vegan Burritos


What’s up people, today I’m really excited to share with you my own recipe for these easy cheat-night vegan burritos. These burritos are perfect for a Friday or Saturday night in front the tv after a long and busy week like the one I’ve just had!

Next weekend unofficially marks the start of the winter racing season for me, where I will be competing at the Red Bull 25 hour Time Laps event in Windsor Park. The week after that I’ll be at Lee Valley for the first round of the Full Gas winter series, meaning its been a heavy few weeks of training preparing for these, leaving me with less time to cook complete scratch-cook meals. This inspired me to come up with a recipe that’s quick and easy to make, fairly healthy, high in protein and most importantly full of amazing flavour.

Introducing my Cheat Night Vegan Burritos 🙌🏽

The reason I’ve labelled these vegan burritos as ‘cheat night’ burritos is because some of the ingredients are pre-made. If you follow my recipes you know that normally I like to make everything from scratch, but let’s be honest, nobody has time to do that everyday of the week. Sometimes its alright to cut corners.

So for these burritos, I had thought about using my homemade vegan cheese sauce, but opted from some grated Violife instead. I could have refried the beans myself, but decided to used a tinned version, and I could have made suggested making mock-meat from tofu or soya or seitan, but instead went for some frozen Quorn Vegan Pieces instead.

What we have ended up with is some vegan burritos that are:

  • Easy to make
  • Full of flavour
  • Cheesy
  • High in protein
  • High in fibre

You can eat these vegan burritos on their own but I recommend pairing them up with a simple side salad. I made a really quick mango and black bean salad which I can post the recipe for soon if you guys want? (Let me know in the comments.)

Cheat Night Vegan Burritos

Prep Time 20 minutes
Cook Time 5 minutes
Total Time 25 minutes
Servings 4 burritos


  • 1/2 cup brown rice
  • olive oil
  • 200 g vegan meat pieces I used Quorn Vegan Pieces
  • 1/2 tsp chilli powder
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1 tsp brown sugar
  • 1/2 tsp mustard powder
  • 1 brown onion (chopped)
  • 400 g refried beans
  • 2 avocados
  • 1 tbsp lime juice
  • 50 g grated vegan cheese I used Violife
  • 4 flour torillas
  • 1/2 cup chopped fresh coriander leaves
  • salt
  • pepper

For the chipotle cream sauce

  • 1/4 cup thick vegan cream I used Oatly Creme Fraiche
  • 2 tbsps lime juice
  • 1 tsp chipotle paste


  1. Cook the brown rice first as this will have the longest cooking time. Simmer with a pinch of salt in a pot for about 25 minutes (or to packet instructions) until cooked. Remove from pot into a bowl and set aside.

  2. Heat the olive oil in a frying pan and add the vegan meat pieces. Add all the spices (chilli, paprika, oregano, cumin, coriander, brown sugar, mustard powder, and some salt and pepper) to the pan, stirring and tossing so that all the pieces are covered. Cook in the pan for about 10 minutes, or until cooked through. Remove the pieces from the pan into a large bowl and set aside.

  3. Add a little more oil to the pan and sauté the onions for about 7 minutes or until translucent. Remove from pan into a bowl and set aside. 

  4. Thinly slice the avocados, pour over a little lime juice and set aside.

  5. Gently warm up the refried beans in a pot for about 5 minutes then set aside.

  6. Make the vegan chipotle cream by adding all the ingredients to a small bowl and stirring to combine. Set aside to use in a minute.

  7. By now you should have all the ingredients for the burritos cooked and set aside ready to assemble the burritos. I like to assemble the burritos in this order: 1) Warm a flour tortilla in a pan on the stove or to packet instructions and then place on a plate. 2) Spread a good spoonful of the refried beans across the centre of the tortilla. 3) Add a small handful of the vegan meat pieces onto the beans. 4) Top the meat pieces with a spoonful of brown rice. 5) Add a small amount of the onions onto the brown rice. 6) Layer on some grated vegan cheese. 7) Top this with a good dollop of the vegan chipotle cream. 8) Place some avocado slices on top. 9) Add some chopped coriander leaves and sprinkle with a bit of salt. 10) Wrap the burrito and serve with a side salad!
