5-Ingredient Almond Energy Bars


What’s up people. Happy Saturday. I hadn’t planned on cooking anything today but whilst digging around the cupboard I found an unopened packet of almonds waiting to be eaten. I also had some dates, cranberries and coconut ready to go, so boom – these delicious almond energy bars were born.

A small handful of almonds provides us with good amounts of fibre, Vitamin E, manganese, magnesium and a ton of protein. Almonds also contain lots of antioxidants which help prevent against several chronic diseases including cancer. They’re really good for you basically.

The sweetness in these bars comes from the dates, cranberries and coconut which are all unrefined, whole, natural sweeteners. No need for honey or syrups in these bad boys so no guilty sugar overdoses after you eat 4 of them while taking the pictures. Yeah, whatever.

5-ingredient Almond Energy Bars

These healthy vegan almond energy bars are so simple to make and taste delicious. Made from 100% whole foods with no added sugars.

  • 1 cup almonds
  • 1 cup dates
  • 1/2 cup cranberries
  • 2 tbsp desiccated coconut
  • 1 tbsp almond milk


  1. Add all the ingredients to a food processor and blend for a couple of minutes until a sticky texture is formed. I like to have a bit of crunch in the bars so I stop blending while the almonds still have a bit of bite to them

  2. Spoon the mixture out onto a chopping board of baking tray and flatten out into a big square slab about 1cm thick

  3. Put the tray in the freezer for about an hour to let the bars set

  4. Remove from the freezer and cut into desired size!
